I'm trying to decide what lens I should buy....

Should I get a prime lens or a package with a zoom 'kit' lens, like canon's efs 18-55?

No, no, no, no, no! You are about to make a big mistake! Get as far away from zoom lenses with high f-stop starting points as you can. RUN! NOW!
These lenses are made by the devil himself. They produce nothing but wide messy shots and personify the concept of "TOTAL CRAP"

Do this:
If I were you I would spend 200USD and buy the Canon 50mm 1.4 or the Nikon 50mm 1.4, and then I would put that on a crop factor cheap body. For instance on a crop factor 1.6, so that the 50mm lens becomes a 80mm with f-stop 1.4 gorgeous portrait lens. In this way you get a great lens with a really basic setup, and you're good to go. I would be able to shoot almost all the stuff I shoot today with that. Money is never an excuse, with a 50mm on 1.6 crop you have yourself a winner at no cost!

RUN again. Go get that lens! Zoobie mode yourself out the door, down the street and just buy that lens with-out thinking and enjoy! :)

    If you are investing in canon, avoid their kit lenses, they are much worse than Nikon kit lenses. Yes, a fixed focal length lens is generally better because it has the least problems. There are very good zoom lenses such as (and I shoot nikon but I know Canon has similar offerings) 12-24mm, 24-70mm, 70-200mm but they will burn your pocket too. If you can afford 70-200mm it is an awesome lens across the board for portraiture. I prefer it's bokeh over 50 or 85mm. But that is just me.
